Food Scientist

Food safety, quality, and processing

What this life looks like

You make food safer, more nutritious, and longer-lasting. Food Scientists apply chemistry, biology, and engineering to understand and improve food — its composition, safety, preservation, and quality. In Africa, where post-harvest food losses, unsafe food, and malnutrition are major challenges, food scientists are building the technical foundations of a healthier and more food-secure continent.

What she actually does

You analyse the chemical and biological composition of food products, develop and test food preservation methods, investigate the causes of foodborne illness and spoilage, design food processing systems to improve safety and nutrition, evaluate new food ingredients and additives, test products for compliance with food safety standards, advise food manufacturers on quality control, and develop new food products for African markets.

Where you can work

SectorPlaces in Africa
Food CompaniesNestlé Africa, Unilever Foods Africa, Dangote Foods, Tiger Brands (SA), Cadbury Nigeria — all employ food scientists
Government RegulatoryKEBS (Kenya), SON (Nigeria), SABS (SA), Ghana FDA — food safety testing and standard-setting

NGO & DevelopmentWFP food safety, UNICEF nutrition, HarvestPlus (biofortification) — development sector food science

Why it matters in Africa

Africa loses an estimated $48 billion worth of food annually — much of it through poor handling, inadequate storage, and limited processing capacity. Food safety — contamination with aflatoxin, microbial pathogens, and adulterants — causes millions of illnesses every year. And malnutrition affects hundreds of millions. Food scientists who can develop affordable processing solutions, improve food safety, and fortify staple foods with nutrients are addressing all three challenges simultaneously.

Your pathway in

  • Study Food Science, Food Technology, Chemistry, or Microbiology at university
  • Develop laboratory skills: food chemistry, microbiology, and sensory analysis are the core technical competencies
  • Gain industry experience through internships at food processing companies or food regulatory bodies
  • Build knowledge of African food regulatory frameworks: KEBS (Kenya), SON (Nigeria), SABS (South Africa), and the relevant Codex Alimentarius standards
  • Consider postgraduate study in Food Safety, Food Microbiology, or Food Process Engineering

Skills you will need

  • Food chemistry and microbiology
  • Food safety testing and HACCP
  • Sensory evaluation
  • Food processing methods
  • Regulatory standards knowledge
  • Product development

A woman in this field

Prof. Elna Buys

South Africa

Elna is a leading African Food Scientist and the Head of the Department of Consumer and Food Sciences at the University of Pretoria. Her extensive research specializes in food microbiology, food safety, and the behavior of foodborne pathogens under different processing conditions. Her work is crucial in developing scientific methods to extend product shelf-life, prevent contamination in commercial manufacturing plants, and ensure food security throughout sub-Saharan supply chains.

Take your first step

  • Study what aflatoxin contamination is and why it is one of the biggest food safety challenges in Africa — the FAO and IITA both publish accessible materials on this problem
  • Research the Codex Alimentarius at codexalimentarius.net — it is the international food safety standard-setting body whose standards are adopted across Africa
  • Visit a food processing factory in your area — even a small local food processing enterprise — and observe the quality control and hygiene practices
  • Research the food science and technology degree programmes at your national university and find food companies in your country that offer internships or industrial training
